Holiday Prime Rib Roast with Au Jus & Horseradish Cream Sauce

Ingredients

•Prime Rib Roast

•Carrots

•Rutabaga

•Red onions

•Fennel bulb

•Parsnips

•Brussels sprouts

Supplies to Gather

• Large roasting pan (14 inches or larger)

• Microwave-safe bowl

• Mixing bowl

• Plate

• Aluminum foil

• Oven mitt

• Cooking spoon

• Paper towels

• Salt & pepper

• Cooking oil

• Meat thermometer

Preheat the oven to 425 degrees for convection, or 450 for conventional ovens.

Rinse your produce and gently pat dry.

Peel the parsnips, carrots, and rutabaga. Cut the carrots and parsnips into 1-inch

pieces. Trim the rutabaga ends, then cut into 1⁄2-inch-thick wedges.

Trim the bottom root and top from the fennel bulb. Trim the ends from the red onions and peel away any papery outer layers. Cut the fennel and onions into 1⁄2-inch-thick, apple-like wedges.

Trim the bottoms from the Brussels sprouts, then cut in half lengthwise. Set the sprouts and onions apart from the other vegetables.

Empty one container of Gobble’s compound butter into a microwave-safe bowl (or make your own by mixing salted butter and your favorite herbs. Microwave in 10-second increments until soft, then mix in the seasoning.

Place the thawed prime rib roast onto paper towels and pat dry. Transfer to a plate and spread the seasoned butter all over the prime rib. Place into the refrigerator for 5-10 min, or until the butter solidifies.

In a mixing bowl, toss the parsnips, carrots, fennel, and rutabaga with 3 tbsp. of cooking oil and season with salt and pepper. Spread in a single layer in a roasting pan. Position the prime rib over the vegetables, then place into the oven for 15 min.

Meanwhile, toss the Brussels sprouts and onions with 1-2 tbsp. of cooking oil in the same mixing bowl. Season with salt and pepper.

After the prime rib has cooked for 15 min, reduce the oven temperature to 325°F (convection) or 350°F (conventional). Carefully remove the baking dish. Add the Brussels sprouts and onions and stir to combine with the other vegetables. Return to the oven for 30 min, or until the internal temperature of the roast reaches 120°F. This will result in medium-rare doneness. Please note that the roast will continue to cook as it rests, so the internal temperature will rise slightly.

Carefully remove the baking dish. Spoon the vegetables into a serving vessel and cover to keep warm. Loosely cover the prime rib with aluminum foil and let rest for 20 min before slicing. Reserve the rendered fat and juices for preparing the au jus if desired. After the prime rib has rested, use your sharpest and largest kitchen knife to slice it into 1-inch steaks.

To prepare the au jus, combine the beef broth concentrate, demi-glace, sherry cooking

wine, and 1 cup of water in a saucepan. Add the reserved drippings from the prime rib roast if desired. Bring to a simmer over medium heat, stirring occasionally. Cook for 4-5 min, or until the aroma of alcohol dissipates.
