  • Shallot-garlic confit

Tools to Gather

  • Oven-safe saute pan (10 inches)
  • Kitchen knife & cutting board
  • Oven mitt
  • Plate
  • Cooking spoon
  • Paper towels
  • Salt & pepper
  • Cooking oil

Preheat the oven to 425°F convection or 450°F conventional.

Prepare a plate by lining with paper towels. Rinse your produce and gently pat dry.

Heat 1⁄2 tbsp. of cooking oil in an oven-safe saute pan over medium heat. Add the spinach and cook for 2 min, or until wilted. Transfer to the lined plate.

Carefully add the shallot-garlic confit and heavy cream to the hot pan and bring to a simmer. Cook for 3-4 min, or until the cream is thickened and reduced.

Meanwhile, carefully and gently squeeze the hot spinach with the paper towels to remove any excess moisture. Roughly chop the spinach, then stir it into the cream sauce and cook for 1 min. Turn off the heat. Season to taste with salt and pepper.

Sprinkle the white cheddar and Gruyère cheese and the Italian cheese blend over the creamed spinach. Place into the oven for 5-7 min, or until the cheese is melted and browned. Carefully remove from the oven and set aside to cool slightly.
