Souvlaki-Marinated Salmon with Greek Orzo Salad

Inspired by the flavors of the Mediterranean, this tasty and balanced dish is a family favorite! Sustainably raised in pristine Chilean waters, these quality salmon fillets are first marinated in our bright, Greek, souvlaki-style marinade, then pan-roasted to perfection. The salmon is served over a Greek orzo salad studded with sweet toybox cherry tomatoes, crisp bites of cucumber, kalamata olives, and crumbles of feta cheese.

Ingredients: Salmon Fillets, Toasted Orzo (wheat flour, salt, water), Kalamata Olives, Toybox Cherry Tomatoes, Persian Cucumber, Shallot, Feta Cheese, Souvlaki Marinade (red wine vinegar, canola oil, honey, garlic, oregano, parsley, pepper, salt)

Step 1

Place the salmon fillets onto paper towels and pat dry. Season on both sides with salt and pepper.

Gently wash and pat dry your fresh produce. Then use a kitchen knife and cutting board to:

  • Slice the toybox cherry tomatoes in half.
  • Slice the Persian cucumber lengthwise in half, then slice into thin half-moons.
  • Slice the shallot in half, then slice into thin half-moons.

Shake the package of souvlaki marinade.

In a mixing bowl, toss together the toasted orzo, kalamata olives, sliced Persian cucumber, sliced toybox cherry tomatoes, sliced shallot (use as desired), and feta cheese (omit for milk allergies), with half of the souvlaki marinade. Season to taste with salt and pepper.

Step 2

Place a nonstick saute pan onto the stovetop, add 1 tbsp. of cooking oil, and set the heat to medium. When the oil is hot, place the salmon fillets skin-side down into the pan. Be careful for any oil splatter.

Cook the salmon fillets for 3 min. Then use a spatula to carefully turn over the fillets, and cook for 2-3 additional min.

Turn off the heat, and pour the remaining souvlaki marinade onto the salmon fillets. Gently swirl the pan to evenly coat the fish.

Step 3

Let’s plate: spoon the Greek orzo salad into shallow bowls or plates. Place the souvlaki salmon on top of the orzo salad.
