Beef Bourguignon with Mashed Potatoes

This delicious comfort dish features diced beef, cremini mushrooms and pearl onions all simmered in a fragrant red wine stew with fresh thyme. The soul-warming beef bourguignon is served over buttery mashed potatoes.

Ingredients: Beef bourguignon (carrots, celery, onions, garlic, thyme, red wine, beef stock, dairy, flour, diced beef), pearl onions, mashed potatoes (potatoes, cream, butter), cremini mushrooms

Step 1

Use your kitchen knife and cutting board to slice the cremini mushrooms into quartered pieces.

Place the deep saute pan onto the stovetop, add 2 tbsp. of cooking oil, and set the heat to medium-high.

When oil is hot, add the sliced cremini mushrooms and pearl onions to the pan. Be careful for any oil splatter. Season with salt and pepper, and cook for 3 min.

Step 2

Lower the heat to medium, add the beef bourguignon to pan and gently stir together. Cover the pan with a lid, and simmer for 5-7 min, stirring occasionally. Taste the sauce, and season with salt and pepper to taste if desired.

Meanwhile, add the mashed potatoes to a microwave-safe bowl covered with a damp paper towel, and microwave for 1 min. Stir, then microwave for 30 additional sec. Stir mashed potatoes for 30 sec or until they thicken slightly.

Step 3

Let’s plate: in a shallow bowl spoon the mashed potatoes into a mound. Spoon beef bourguignon over the mashed potatoes and serve.
