Chicken Florentine Rigatoni Bake with Sun-Dried Tomatoes

Juicy diced pieces of chicken breast are tossed together with sweet sun-dried tomatoes, spinach, artichokes hearts, and rigatoni mezzi pasta in a creamy Florentine sauce. The pasta casserole is then sprinkled with shredded gruyere cheese, parmesan cheese, and bread crumbs then finished in the oven for a perfect, golden-brown crust.

Ingredients: Chicken breast, sun-dried tomatoes, spinach, artichoke hearts, gruyere cheese, Swiss cheese, parmesan cheese, bread crumbs, Alfredo sauce (onions, garlic, white wine, thyme, cream, rice starch), rigatoni pasta (semolina flour, water, egg yolks)

  • Preheated oven (middle rack at 500°F)
  • Oven-safe saute pan (10 inches or larger)

Step 1

Set the oven rack to the middle position, and preheat to 500°F.

Fill a sauce pot with 2 quarts of water, and place it onto the stovetop. Season the water with up to 2 tbsp. of salt, and bring to a boil.

Add the rigatoni pasta into the pot, and cook for 5-7 min, or to your desired doneness.

Place a saute pan onto the stovetop, add 2 tbsp. of cooking oil and set the heat to medium. When the oil is hot, add the diced chicken breast into the pan. Be careful for any oil splatter. Season with salt and pepper and cook for 3-4 min, stirring occasionally.

Step 2

Add the sun-dried tomatoes, roasted artichoke hearts and the spinach. Stir together, and cook for 1 min, or until the spinach has wilted.

Add the alfredo sauce and egg yolks to the pan. Stir together, and bring to a simmer.

Use a pasta strainer to drain the rigatoni from the pot of water and add to the pan with the alfredo sauce. Stir together and cook for 1 min. Then turn off the heat and add the Swiss cheese & Gruyere cheese.

Top with the Parmesan breadcrumbs and place the pan into the oven. Cook for 2 min, or until the top is dark-golden brown. Use a dry, folded kitchen towel to carefully remove the pan from the oven.
