Vietnamese Shaking Beef with Toasted Garlic Noodles

Tender slices of flat iron steak are first seared then tossed in an authentic Vietnamese shaking sauce prepared with rice vinegar, fish sauce, soy sauce, and pure cane sugar for a touch of sweetness. The slices of steak are sautéed with scallions and zesty red onions and served over a fresh watercress salad with cherry tomatoes. A side of our delicious buttered garlic noodles completes our take on the Vietnamese classic.

Ingredients: Sliced flat iron steak, ramen noodles (wheat flour, water, salt, kansui, tapioca starch), shaking beef sauce (rice wine vinegar, mirin cooking wine, soy sauce, fish sauce [anchovy, salt, sugar], water, garlic), cherry tomatoes, lime, yellow onion, green onion, watercress, garlic parmesan butter (butter, garlic powder, parmesan cheese), toasted garlic

  • Sauce pot (3 quarts or larger)
  • Saute pan (10 inches or larger)
  • Pasta strainer

Let's get cooking

Step 1

Fill a sauce pot with 2 quarts of water, and place onto the stovetop. Season the water with 2 tbsp. of salt, and bring to a boil.

Gently rinse the watercress, and pat dry with paper towels. Then use you kitchen knife and cutting board to:

  • Trim off the bottom of the watercress as needed, and place the useable stems and leaves onto both serving plates.
  • Slice the cherry tomatoes in half.
  • Quarter the lime.

Place the pieces of sliced flat iron steak onto a plate, pat dry with paper towels, and lightly season with salt and pepper.

Place a saute pan onto the stovetop, add 2 tbsp. of oil, and set the heat to medium-high. When the oil is hot, carefully add the sliced flat iron steak to the pan. Be careful of any oil splatter. Cook for 3 min without stirring.

Step 2

While the pieces of sliced flat iron steak are cooking, gently separate the ramen noodles with your hands, and add them to the pot of boiling water. Stirring occasionally, cook the noodles for 2 min, or until they reach your desired doneness.

Then turn off the heat, and use the pasta strainer to strain the ramen noodles from the sauce pot. Return the cooked ramen noodles and the peppercorn & Parmesan butter to the sauce pot, and gently stir together until the noodles are thoroughly coated.

Next, add the sliced onions to pan with the pieces of sliced flat iron steak. Stir together, and cook for 60-90 sec or until the onions have softened slightly. Then add the shaking sauce, and stir for 30 sec or until the sauce reduces slightly and caramelizes on the beef. Then turn off the heat.

Step 3

Let’s plate: arrange the sliced cherry tomatoes over the beds of watercress. Then spoon the sliced steak, onions, and shaking sauce over the watercress. Add a squeeze of lime if desired. Serve the ramen noodles on the side, and top with the toasted garlic.
